Healthy White Chicken Chili

Ingredients
  

  • 1/2 TBSP coconut oil
  • 1 onion , choppped
  • 2-3 cloves garlic , minced
  • 2 jalapenos , finely chopped
  • 1 TBSP cumin
  • 2 tsp chili powder
  • salt and pepper
  • 1 cup chicken broth
  • 2 cups bone broth
  • 3 cups chickpeas , reserve half
  • 1.5 cups Great northern beans
  • 2 lbs chicken , roasted or a rotisserie chicken is great!
  • 1 cup corn
  • 1 lime , juiced
  • 1 cup cilantro , finely chopped
  • Optional Toppings: avocado, cilantro, lime, tortilla chips

Instructions
 

  • Add coconut oil, onions, garlic , & jalapenos to stockpot. Simmer until onions are browned.
  • Add the seasonings, broth, half of the chickpeas, and the northern beans to the stockpot. Let simmer for 20-30 minutes.
  • Add chicken, corn, cilantro, and lime juice. Simmer for 10-20 minutes until all flavors are combined.
  • Serve warm and add toppings if desired.
