This healthier take on white chicken chili is a great alternative to the traditional white chicken chili full of heavy creams, milk, and dairy products! The “secret ingredient” makes such a thick and creamy broth creating a much healthier take on white chicken chili!
The “secret Ingredient” in this Healthy white chicken chili
This white chicken chili is made without any cream, milk, or dairy products! However, the broth is still so creamy! But how?
The secret ingredient is….chickpeas! Both whole chickpeas as well as blended/pureed chickpeas are used to make a creamy broth that replaces the dairy products typically used in white chicken chili.
Most white chicken chili is made with northern beans, however, I think the chickpeas add a unique taste and texture to the rich, creamy broth in this chili! I did keep a few northern beans in this recipe as well!

What’s in healthy White Chicken Chili?
Most of these ingredients can already be found in your pantry! So this is a great make-ahead meal prep for lunch or dinner or even for a cool fall game day!
You will need:
- Onions
- Garlic
- Jalapenos
- Various spices
- Bone Broth/Chicken Broth
- Whole chicken or you can use thighs or breast
- Chickpeas
- Great Northern Beans
- Corn
- Lime
- Cilantro
This is such a cozy comfort food and is great piled high with avocado, jalapenos, tortilla chips, and maybe even some spicy fermented jalapenos!
How to Make healthy white chicken chili in your slow cooker:
I made this recipe on my “new” 1950s vintage stovetop, but making healthy white chicken chili in the slow cooker is SUPER EASY. Using a slow cooker is perfect for making this an extremely “hands-off” meal!
Add all of the ingredients except the lime juice and cilantro to your slow cooker. Be sure to reduce the amount of broth in the recipe by about 1 cup since the slow cooker will create condensation as the chili cooks. Cook on high for 3-4 hours or low for 6-7 hours. Remove the chicken and shred. Add the chicken back to the slow cooker and stir in lime juice and cilantro. Season to your taste preference!
How to Make Healthy white chicken chili
Healthy White Chicken Chili
Ingredients
- 1/2 TBSP coconut oil
- 1 onion , choppped
- 2-3 cloves garlic , minced
- 2 jalapenos , finely chopped
- 1 TBSP cumin
- 2 tsp chili powder
- salt and pepper
- 1 cup chicken broth
- 2 cups bone broth
- 3 cups chickpeas , reserve half
- 1.5 cups Great northern beans
- 2 lbs chicken , roasted or a rotisserie chicken is great!
- 1 cup corn
- 1 lime , juiced
- 1 cup cilantro , finely chopped
- Optional Toppings: avocado, cilantro, lime, tortilla chips
Instructions
- Add coconut oil, onions, garlic , & jalapenos to stockpot. Simmer until onions are browned.
- Add the seasonings, broth, half of the chickpeas, and the northern beans to the stockpot. Let simmer for 20-30 minutes.
- Add chicken, corn, cilantro, and lime juice. Simmer for 10-20 minutes until all flavors are combined.
- Serve warm and add toppings if desired.
