Lemon bars have been a long time favorite of mine and when my husband asked me to make the lemon bar recipe from Joanna Gaines Magnolia Table cookbook, I did not object. After making these delicious bars, I knew I needed to make some healthier swaps if these were going to be a repeat treat in our home.
I have already declared my family’s love for fermented foods and wholesome clean, from scratch recipes. So it may come as a surprise that I am posting a recipe for a sweet treat.
We believe in consuming all things in moderation and these are definitely a treat that we do not consume daily. These lemon bars are still made with top quality ingredients that our bodies can recognize, but they still contain sugar which is one food item we do not overdo!

I recently realized that most brown sugar you buy is simply refined white sugar with added molasses. This defeats the entire purpose of swapping the white sugar for brown. To ensure that the sugar was not chemically altered, buying organic brown sugar is best.
how to make homemade powdered sugar
- 1 cup of coconut sugar
- 1 TBSP of arrowroot powder
In a blender, pulse ingredients until they form a fine consistency. Store any extra in an airtight jar.
Using this homemade powdered sugar instead of white powdered sugar will give your baking items a darker look since coconut sugar is not refined. If you are wanting a white powdered sugar, you can swap the coconut sugar for organic cane sugar.

INGREDIENTS
- 2 cups Einkorn Flour (I purchased this flour from Amazon, but you can substitute all-purpose)
- 1 stick butter, at room temperature
- 2 T coconut oil, melted
- 1/2 cup homemade powdered sugar ( coconut sugar & arrowroot powder)
- 1/4 t sea salt
- 2 cup brown sugar or coconut sugar
- 4 eggs
- 6 T lemon juice
HOW TO MAKE LEMON BARS
- Preheat oven to 350 and line an 8×8 baking pan with parchment paper
- Mix flour, butter, coconut oil, powdered sugar, and salt in a large mixing bowl. Do not overmix to yield a flakier crust.
- Add mixture to parchment-lined baking pan.
- Bake approximately 20 minutes until the crust is formed.
- While the crust is baking, mix the remaining ingredients: brown sugar, eggs, and lemon juice.
- Remove the crust layer once it is firm and add the top lemon layer.
- Bake the lemon layer approximately 20 more minutes.
- Cool completely before cutting.
- Optional: Sprinkle a little extra powdered sugar on top to “dust” the bars.
Note: These lemon bars will not have the traditional lemony look since brown/coconut sugar is used instead of white. They taste just as delicious, if not better!
