Everyone loves a classic chocolate chip cookie. It’s such a great dessert, and even more so in this chocolate chunk cookie skillet version. Join me for this healthier take on the ‘Pizookie’ many restaurants serve.
This chocolate chunk cookie skillet is similar to its individual cookie version but with somewhat of a crust and a soft, cakey inside. Topped with a scoop of my “nice cream,” made from mostly bananas, this is the perfect treat! Plus, I love any excuse to use my cast iron skillets!
I usually make a the regular version of this dessert in an 8″ cast iron skillet, but I have also made a half batch in my mini 4″ cast iron! It’s the perfect dessert for two to share. Or one, if you wish!
If you prefer more of a crunch to your cookie, add 2-3 extra minutes on the cooking time or bake in a larger skillet to thin out the batter.

I do not LOVE adding sugar to many recipes in our home and try to find swaps whenever possible. The effect sugar has on the immune system is far too great to consume this food item very often. However, an occasional treat with a hint of sugar is completely acceptable! It’s the habit of it that wreaks havoc on our bodies!
I have tried this recipe with maple syrup, honey, and various nut butters. The final product is GOOD, but it just isn’t the same. Therefore, this little bit of brown sugar is almost necessary in this cookie skillet! Plus there aren’t too many cookie recipes I know of that omit sugar completely that still taste amazing!
Most brown sugar you buy is simply refined white sugar with added molasses. This defeats the entire purpose of swapping the white sugar for brown. To ensure that the sugar was not chemically altered, buying organic brown sugar is best.
Dark chocolate instead of semi-sweet chocolate
Dark chocolate has higher % of cacao vs milk chocolate. Cacao is raw chocolate and is loaded with antioxidants. (Source) I always try to buy higher forms of cacao when shopping for chocolate. (70% or higher is preferred)

How to make a chocolate chunk cookie skillet
- Preheat oven to 350 degrees and grease cast iron skillet with coconut oil.
- Cream butter and brown sugar together in mixer.
- Add egg and vanilla and mix well.
- Add remaining dry ingredients, flour, salt, baking soda, and mix until batter forms.
- Add chocolate chunks.
- Scoop into cast iron and sprinkle with sea salt.
- Bake 18-20 minutes.

- Cast Iron skillet
- 2 cup Einkorn Flour , or All Purpose Flour
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 stick grass-fed butter , room temperature
- 1 cup organic brown sugar
- 1 tsp vanilla
- 1 egg
- 1/2 dark chocolate bar , cut into chunks
